How We Select Our Olive Oils:

Every year we search high and low for new extra-virgin olive oils..... We try hundreds of oils from dozens of producers just to pick a handful to offer to you.

About Pressing and Dates Olives are picked in the fall/winter, typically late October through December. The best oils are then pressed the same day the olives were harvested. Olive oil is dated according to the date it was pressed. So the olive oil that we sell beginning in early 2008 was pressed a few months earlier, in late 2007, and is labeled "2007 harvest." We only sell the newest harvest of olive oils: oils that were pressed in the previous calendar year.
