
Marmalade is a preserve with suspended pieces of fruit. Typically this treatment is used for citrus fruits which are high in juice and low in texture. June Taylor's Meyer Lemon Marmalade is an example of a "soft" set marmalade, while Kitchen Garden's Organic Seville Marmalade is a more "firm" set version. The Sicilians are masters of marmalade, but they take a different approach. The percentage of jelly to rind is reversed dramatically in these dense yet spreadable preserves.
