
Jellies are the consummé of preserves made from strained fruit juice, pectin, and sugar. Rosebud Farm's Mint Jelly is a good example. Probably the most fragile of preserves, curds contain fruit, usually citrus fruit, eggs, butter and sugar. They are rich and silky but need to be consumed immediately or refrigerated. Bay Tree's Very Lemon Curd is an example of a rich, traditional curd.
