Mold is beneficial to the aging process of salame. Our salame can have both white mold (penicillin candidum) and blue-green mold (penicillin glaucum). Both are harmless strains, similar to the molds found on cheese. Depending on storage conditions, mold may change in color and increase or decrease in quantity. Changes in the mold alone do not affect the quality of the salame.
Mold Removal: Mold may be removed from the salame with a stiff brush. After brushing, the casing may be reconditioned with a dusting of fine rice flour.
Storage: Store the salame under any of these conditions:
- A cool room (temperature no higher than 50-60 degrees F)
- A refrigerator
- A refrigerated case
Store the salame in breathable wrapping, such as butcher paper or cheesecloth.
