This slim little bottle holds the excellent "Family Reserve" balsamic condimento from Acetaia Dodi in Reggio Emilia. Aged for many years in wooden barrels, this is a rich, complex vinegar - a small spoonful will make your salads sing, and it's a beautiful complement to hard cheeses or vanilla ice cream.
About the Producer
The Dodi family have deep ties to the culinary specialties of Italy's Reggio Emilia region: This is a family with a history of making both Parmigiano-Reggiano and balsamic vinegar.
When current owner Ricordano Dodi's grandmother was born in 1891, small casks of balsamic vinegar were set aside for her, as was the regional custom. They were part of her dowry when she married, and she held on to them, carefully topping them off with new grape juice from time to time, and refusing to sell them even in hard times. These casks became a legacy for the next generations, and in addition, she taught her grandson Ricordano all of her little secrets about how best to add to the aging balsamic over the years. Today, while he is still a cheese-maker, the newer family business flourishes side by side with the old.
