The Chalkidiki olive (sometimes spelled Halkidiki) is named for a peninsula in northeastern Greece, east of the city of Thessaloniki, where this variety flourishes. Most people encounter the Chalkidiki as a large-to-medium green olive that has been cured in salt and packed in brine or vinegar, but the best ones are packed in olive oil. Because of their plump size, they are often stuffed with garlic, orange, lemon or nuts - check out our many varieties!
