Pascal PRIGENT is an apiculturiest from the North coast of Brittany in the region of Finistère. He typically sells his honeys in the regions weekly markets, and we are proud to be the first to offer his honeys here in the USA. The cooler climate in this part of France has apiculturists like Pascal using the blossoms of the prevalent plant life of the region. He is especially known for his heather blossom (bruyère) and fir (sapin) honeys. His heaather honey is naturally crystallized at room temperature making it thick and spreadable. It is pungent in aroma and robust in flavor with molasses and malty tones and a lingering, tangy aftertaste that indicates the presence of enough acidity to keep it from being too "sweet". It is a delightful honey for the breakfast table.
