The price quoted in the March issue of Saveur Magazine was based on the cost of a shipment we received in September. Given the shortage of lavender honey again this year in Provence, increased shipping costs, and a drop in the value of the Dollar versus the Euro, the cost of the lavender honey shipment that will arrive March 7th is significantly higher (about 25 %) and this has forced us to raise our price.

Honey from bees fed on lavender blossoms is unmatched in richness and scent and exquisite in flavor. The honey is viscous due to the presence of naturally occurring beeswax and pollen. Jean-Pierre's lavender honey has a floral aroma that leads one to immediately think of Provence, even if you haven't been there - however, it does not smell of lavender at all since the bees use only the nectar, which does not contain any trace of the essential oil. It is thick but spreadable in texture, and it is oh so smooth on the palate.

About the Producer:

This all-natural honey is culled from the apiaries of the Jean-Pierre Berger, a nomadic beekeeper in Provence. He makes his home in Cabrières d'Avignon, about 30 kilometers to the south east of Avignon, but you might just as well say that is home is all of Provence.

Jean Pierre offers a range of honeys with a fine, soft crystallization and a superior flavor. His honey is harvested in a region that is far from industrial centers, and from highways. He lodges his bee colonies individually in hives, and they are periodically moved according to the weather and pollination patterns in a particular year.

He gathers his honey through the use of a centrifuge at an ambient temperature, without any heating. The only other processing is simple decantation in stainless steel colanders. This ensures the presence of a large number of grains of pollen in suspension in the honey - proof to its authenticity, and this also contributes to the characteristic taste.

Suggested Uses:

Use in small or generous amounts on baked goods, glazes, and desserts. This is one of our longest lasting favorites. In the retail store whomever we sample it too, buys it! It really is gooood....
