From trees tended by his family for generations, Jean-Paul Bex cultivates walnuts that yield a superbly perfumed oil. The nuts are pressed at the mill of a friend, a stone mill so ancient that no one can believe it is still functional.
Ah, but the oil it makes!!! The nose is pure walnut, the texture is smooth and silky and the flavor is that of freshly cracked walnuts.
Jean Paul doesn't toast his walnuts like most other oil producers - toasting can mask some of the flavor of mediocre walnuts - and so his oil is fresher on the palate with none of the astrincency common in toasted nut oils.
Serving Suggestions
Walnut oil is wonderful in salad dressings - after you grow used to the warm, nutty notes it adds, it's hard to go back. It's also great for flavoring soups, stews, and cakes - it takes lentils to entirely new level. The supply is limited.
