A smooth, subtly sweet, light and airy vinegar from the Banyuls region in southern France, which is famous for its dessert wines. This Banyuls vinegar is made from white grenache, muscat, and grey grenache grapes.

Oldest producer in the region, the Cooperative Etoile was founded in 1921 by a group of wine growers united by very close family relations - it is the oldest in Banyuls. 80% of the production of the world-renowned dessert wine comes from 12 vineyards -- and production is extremely limited. Aged Banyuls wine undergoes acidic fermentation, after which the vinegar is aged in wood barrels for six years.
