The markets of Fez and Marrakech have numerous stalls where olive vendors sell many different kinds of marinated olives delectably displayed in large mounds. They range in flavor from savory to sweet and pungent to aromatic.
These delicious green olives have been marinated in a typical Tunisian preparation of hot red pepper, bay leaf, lemon and salt. They open with a smooth savory flavor of green olive and quickly move to a spicy harissa finish.
